I have found tutorials on how to set up notification for incomplete payments:

However, this is no longer accurate and I can't find how to do it with the new format/look. If I select "edit properties" on my PayPal field, there are no notification options. I have several forms on which I would like to make this change, as right now the only way I can tell if I have incomplete payments is by opening each form individually and viewing submissions. This is tedious and time-consuming.
If there is another way I can see at a glance which forms have incomplete payments, I would love to know how (similar to they way I can see at a glance which forms have new submissions on my "My Forms" page).
I have attached a screenshot of the PayPal properties edit options I am given.

Click on the PayPal field, then, click on the little magic wand icon in the top right. This will open the menu for your payment field:
Click on the little gear to open up the integration set up for the field, this same menu will be shown when the PayPal field is first added to the form:
Click on "Additional Gateway Settings", then, change "Pending Payment Email" to "Yes".

Yes. This is the screenshot of the “wizard” that comes up when I click on
the magic wand. As you see, it is not the same format as the shot you sent
me, and it does not have the same options.

It is not possible to attach a screenshot to the email response, it would need to be done to a forum post. If you wouldn't mind attaching the screenshot directly, it would be much appreciated:

My Payment wizard looks very different, and doesn't have the same options.

The option is not available from our old UI. Try logging out of your account, clearing your browsers cache/cookies, then logging back in. That should load the new UI. Loading the site in an incognito or private browser should also load the new UI.

Unfortunately, it is still not working. I even accessed my account from a different browser that I hand't used before for JotForm. If you look at the screenshots below, you will see that the new UI is in use. I have had the new UI for a while now on all of my forms. For some reason, it just isn't showing up for the paypal wizard. Below are screen shots of the same form. #1 when clicking on the wizard in the paypal field #2 when clicking on the gear/setting in the paypal field.

Try using this URL while editing your form:
We usually don't share the test UI url, however, in this case, yours seems to constantly default to the old UI. That URL should load the newest UI.

Using this URL, I do get the correct UI for the payment wizard. If I keep
my account open, I can leave the form and then return to it with the
changes intact. However, if I log out of my account and log back in, any of
the changes I made on that payment wizard are not saved.

Try from a fresh browser, if you are using FireFox, use Chrome and visa versa. It seems your browser will not clear the old payment UI's even when clearing cache and I am not sure why the test UI will not saved changes. Using a fresh browser will ensure the current UI is loaded and should allow for you to set the incomplete payment notification.
