We have an employee that was notified of submissions on a number of forms that is no longer with our company. Is there a way to remove her email address at one time rather than having to manually go through each form to see if she's being notified and then remove the email address from each form?

Unfortunately, it is not possible to edit or remove the recipients email address of email notification of all the forms automatically or at once.
You would require to check all the email notifications manually, and then would require to edit the Recipient email field.
