Uploading multiple files

With the basic field of "upload file" can I upload multiple documents or do I need to have one upload file button for each file I want to upload?

You can enable the "Allow Multiple" options in the File Upload field. Here's how:

Select the File Upload field and then click the "Allow Multiple" button above.
