For instance, I have one form for x type of people, another for staff, etc etc. but all of the data sums in one Google Spreadsheet... thanks.

I'm afraid not - each of our forms are collecting submissions on their own submissions page, and similarly they always pass this data to their own integrated Google Spreadsheet. So there qould be one Google Spreadsheet per form.
You can integrate your forms to Google Spreadsheet by following this guide:
The workaround to try and achieve your requirement could be by first setting up Google Spreadsheets integration on each of your forms, and then possible "importing" such data from multiple spreadsheets into your combined file by using the IMPORTRANGE function of Google Spreadsheets:
Another way to combine submissions from multiple forms into a single file would be by using our Combine Submissions app, but this would have to be done by you manually - any time you wish to export all of your submissions on a single spreadsheet:
