Also, I'd love to format the confirmation email that the users receive.

You can format the confirmation email that the users receive by clicking on the Email tab in your Form Builder as you can see the following screenshot :

To do that, first of all, click on Emails and Autoresponder.

 

After that, you can update your email template when you're on Email tab.
