Is it possible for our users to receive a copy of their completed forms once they submit? If so please can you tell me how to set it up.

By enabling "PDF attachment" utility under Autoresponder, users can get their completed forms in PDF format. You can find this utility after clicking on "E-mails" section, then under advanced settings, you can see the utility. Hope it helps.

You can send your users an autoresponder email. The autoresponder is automatically created as soon as you add the name and email fields in the form, but if you don't have it, you can simply create one. Please follow the steps on this guide:
As mentioned by gkartal, you can also attach the PDF copy in the autoresponder, simply enable this option from the Advanced tab:
