I would like to know if you jotform have somekind of form template that fulfills the conditions below:

We want a response form where when an employee is sent a link to the form they can select from a drop down menu of gift card options, I also need the form to automatically deduct from the total available cards and then remove that option when it reaches 0. For example, we have 1 Boston Pizza Card left and someone chooses that as their option, I don't want Boston Pizza to show up on the list of options anymore... if possible.

I would suggest you to take a look to our form templates, there you could find one form that fits your needs and you can clone it and make the needed changes to customize it as you want.

Here's the link to the templates that may help you:

Here's also a guide that will help you to use form templates: How-to-use-the-form-templates

But for the special requirement you're asking you will need to use a widget, the Gift Registry widget will help you to display options in your form as check boxes so once each options is chosen it will decrease the available number, here is the link to it so you can take a look:

There is also another similar widget, but this has a text box where the user will need to enter the quantity they want, it is the Quantity Gift Registry widget and you will find it here:

You will also find sample forms on the page for each widget provided above and this guide will help you to add the widget to your form: How-to-Add-a-Widget-to-your-Form

    Hope this helps.

Also, when there are no more available options in the widget they will appear, but they will be disabled so will not be possible to select the option again.

And here is also another widget that even has drop downs:
