This is a normal behavior of the drop down field. The value will not show up in the submission or in the email alerts because it is considered as an empty or blank value.
Here's a screenshot of the test submission:
The solution is to add another option and make it as a default value.

I believe I have the same question. If I have field with a question, like "What was your past employment?" and the person does not answer, I want to still be able to see the field so I know the person did not answer the question. I know I can make it required, but I would rather not do that. I just want to know if the person is filling out all the questions on the form without being forced to do so.

You can check if the field is empty or not in the submission list, you disable the option of "Auto Hide Empty Fields" as the following screen below:
