How to book a place of an event out of many?

We are running training over several months. I need to be able to offer a series of dates at different venues each with different number of spaces available (so, 15 places for this session, 8 places for that etc.), reducing as they are booked until no more spaces are available.

Data captured needs to show name and e-mail of each person booking and the session they have booked for.

How can we do this please?
