I can't make fields taller and cannot adjust individual field width

You are using a theme in the form. The theme as a few styles that would affect the height/width your form fields. I would suggest using the default and then style it again in the designer.

To remove the theme, please follow the steps in this guide: https://www.jotform.com/help/385-How-to-Apply-and-Remove-a-Theme-Within-the-Form-Builder. 

To adjust the individual width of the field, you have to go to the CSS tab. Double-click the field to add its field ID selector in the CSS area then add your own style through the help of the CSS helper:
