I have a JotForm online form on my website for my customers to fill out. When the form is submitted to me in an e-mail, the only thing I receive are the fields that required input. I have several information text boxes in the form that do not require input and these are not returned along with the response fields.

By default the Notification Email have the Hide Empty Fields hidden. You can check this in your form notifier Advance settings. This can be the reason why unanswered questions/fields on the form were not in the default email message.
As for the TEXT field, since its only a static field, it will not appear also on the email message. You can just manually add it on the Notifier message body instead.
