Dry Store Shelves

Canopy

Remove all filters and clean with hot soapy water.
Clean all canopy surfaces and ridges.
Polish the canopy exterior
Clean and sanitise the peel hooks
Clean peals and brushes
Clean splash panel

Oven ( PERFORM ONLY WHEN THE OVEN IS OFF )

Remove proofing trays, peals and brushes, and clean the top of the oven.
Clean doors inside and out, including glass, handles and ledges.
Empty all storage shelving of stock and clean shelving, legs and walls.
Rotate and replace stock respectively
Sweep and mop under the over shelving.

Fridges

Empty proofing fridge, remove shelving and wash with hot soapy water.
Clean interior surfaces, remove any accumulated water and ice from the bottom of the fridge, then sanitise all surfaces.
Pull out the fridge, clean exterior surfaces and walls, then brush and mop the floor.
Remove any dust build up from vents.
Empty service fridge, remove shelving and wash with hot soapy water.
Clean interior surfaces, remove any accumulated water and ice from the bottom of the fridge, then sanitise all surfaces.
Remove any dust build up from vents.
Pull out the fridge, clean exterior surfaces and walls, then brush and mop the floor.

Fridge temperature gauge checks (record fridge vs laser probe readings)

Saladette Unit

Remove all storage containers and put through the wash.
Remove any food debris, water and ice from inside the saladette.
Clean and polish glass surfaces
Clean all other surfaces
Remove any dust build up from vents.

Wash Area

Clean all sink surfaces, legs and shelving.
Clean splash panel
Organise items under the sink
Dismantle dishwasher parts and clean with hot soapy water, clean interior surfaces, door, drain and seals.
Empty crockery shelf, clean and sanitise

Dough machine

Remove any debris from the mixing drum
Clean the mixing rods
Remove any flour build up from beneath the drum
Clean all surfaces with hot soapy water

Deck scrub floor
Remove flour and dust from all sockets, pipes and cladding

Probe Calibration

Test hot temperature with water directly from the coffee machine.

Test cold water with a metal jug full of iced water.
