Initial Checklist (After Last Call for Food at 10:30; you can begin to break down BOH to close)

Start emptying the Black Busser bins of bottled waters. Place the Aqua Pana and Pelle Grigio back in storage in appropriate places and bins. Leaving 2 of each water until the end of service.	1
Dump out the bottles of Palapa Water. Again, leaving at least 3 bottles just in case.	2
Dump out the LARGE container of Palapa Water. Strain and throw away cucumbers in the trash.	3

Firpit propane is turned off by 11:15PM. (At the tank and on the actual fire pit)	6
ALL Walkie Talkie are collected from Employees and Vendors. Are plugged in to Charge in office over night.	7

CEVICHE BREAKDOWN

An INVENTORY PICTURE is taken and sent to the MOD. Chips should be included in the picture as well. Please type your inventory in words as well. Not just a picture. ( Ex: 4 mixto, 3 classic, 0 vegan, and 1 Cartagena. 3 popcorn, 0 yucca, 1 plantain, and 0 coco malanga.)	10
Cooler is emptied; Ice is dumped; Ceviche is taken to the fridge.	11
Cooler gets sprayed with the hose and cleaned out every night. Set upside down to dry inside.	12

BUSSING DISHES (After ALL food orders are completed ALL food runners become Bussers.)

Take a serving tray with you on the floor and start bussing ANY and ALL tables that have dirty dishes/trash or debris.	14
Politely ask if you can get these items out of the way of the guests.	15
When lights are turned on, you are able to start clearing EVERYTHING. Ask if there are still guests at the table. DO NOT TAKE DRINKS THAT ARE STILL BEING CONSUMED.	16
If there are multiple runners/bussers split up around the room; Divide and Conquer.	17
When bringing dishes back to dump, having 1 person stick to sorting BOH helps ensure the glasses go in the correct places. Be sure to empty the metal dump strainer as needed to avoid overflow.	18
Correctly dispose of the Dump Bucket down the correct drain.	19
When a rack is FULL of dirty glasses; it should be moved and stacked to the right side of the table on a four-wheel cart till washed.	20
Leftover clean glasses should be put away or taken to the bar.	21
Once all Glasses are pulled off the floor; someone is able to start moving racks and washing dishes.	22
ALL DISHES SHOULD BE CLEANED ON DAY OF USE	23

ALL server trays are wiped down with sanitizer EVERYNIGHT.	28
Collect ALL trash cans from around the venue.	29
From ALL (4 ) Brown Trash Containers (leave brown boxes; take black trash cans BOH to empty and be cleaned) SPRAYED OUT AND CLOROXED EVERYNIGHT!) 3 BOH from Runners and Servers	30
Once every trash is taken out; ALL trash cans get sprayed and cleaned with the hose NIGHTLY. Then placed OUTSIDE upside down to dry overnight by Bamboo Panels.	31
Ensure the Ceviche Cooler was cleaned and cloroxed EVERYNIGHT!	32
Sweep the ground BOH witha broom. Should be the last thing that is done. Someone can still be in the dish tank or cleaning trash cans but bussing, trash, and all other tasks are complete before final sweep.	33
Ensure Propane tank from Firpit is unconnected and stored away properly.	34
Gates are shut and locked	35
Bleach/Amonia/or Chlorine is poured down the drains EVERYNIGHT!	36
Get your work checked by the MOD, when approved	37
