I don't want the client who receives the confirmation email to have to reply to it. I haven't specified an email address, but when the client receives the email, they can reply to my Jotform account address. See the example.

Thanks for reaching out to Jotform Support. You mentioned that the Reply-To Email field isn’t working the way you expect, and even when you type none, your personal email still appears in the confirmation email. Let me show you what you can do to fix this.
When you leave the Reply-To Email empty or write something like none, Jotform automatically fills it with the email address on your account. To stop that from happening, you’ll want to enter a throwaway email in that field instead of leaving it blank. Here’s how to do it:
In Form Builder, in the orange navigation bar at the top of the page, click on Settings.
Click on the Emails tab in the menu on the left side of the page.
Click on your Autoresponder Email to open the settings window.

Click on the Recipients tab at the top of the window.
In the Reply-to Email, scroll down and type a throwaway address, like fakeghk@example.com
and then click on Save.
