I have seen a number of similar subjects on the Forum but none seem to answer the question.
A couple of responses include that you need to set up another Auto Responder and send it to a different person. well that is OK, but the JotForm email Auto Responder does not allow you to type in a To: email address, the address must come from the form.
Does this mean that you have to include a hidden email field within the Form ? or am i missing something here?

Unfortunately, we do not have the BCC feature. If you need to set a specific email address as a recipient, then you just need to create a separate email notification, instead of an autoresponder. Here's a guide on how to setup that notification: http://www.jotform.com/help/25-Setting-Up-Email-Notifications.
You can create multiple email notification, have different email contents of each one and send them to specific email addresses.
Here's an example, below I created two notifications, each has a different recipient address. I have a notification specific to "John Doe" only.
On the "Compose Email" window, you can create a template specific for "John Doe", you can remove form fields that you do not want to share to him, or have a custom message.

It is important to us that we get the exact copy of the email the Person gets as the AutoResponder email, that is why i am looking to get a copy of the Auto responder email.
There is text that we create in the intro of the Autoresponder that i need and exact copy of, is it possible to copy the "intro" text of the Autoresponder into the Notification email.

Yes, that is possible. Just copy it from there then paste it in the notification. If you wish to copy the whole autoresponder formatting, you can do that by clicking the source code button:
This is for the email body. If you wish to copy the subject line, you have to manually do it.

Sorry, i should have been more specific, i need this to happen automatically, as the specific notification is being send per transaction

You can actually fire up the same notification by creating an email condition with defined email recipient or the email field from the form. This works similarly as creating a BCC email.
Here's how:
1. Click the Conditions button in the form builder
2. Select Change E-mail Recipient Condition
3. Create the following condition. You can change the condition rule to your preference.

Hello,
This looks to be exactly what i am looking for thank you.
One question, in your example you have put bccEmail@email.com in the second email field, should there be a space or a : between the bcc and the email address please?

The BCCemail@email.com and {email} on Elton's example are separated by "a comma" and "a space".

Yes, there is a space after the comma(,) but there is no colon(:) needed to separate the BCCemail@email.com and other email address.

BCCemail@email.com i was asking if there was a space or : between the C of BCC and the e of email ?

No. That is just an example email.
