When and how quickly submissions are deleted with the use of Auto-Delete submissions app

And finally, considering your offices and therefore servers are in the US, does that affect when/how quickly submissions are deleted? (I am based in the UK)

No, this app deletes new form submissions instantly as soon as they are received. It uses JotForm webhooks so it is almost instant.
