I have setup a demo form for you with the size of 8.5 x 11 inches. Here's the link to the demo form: https://form.jotform.com/63537950131959. You can clone this demo form by following this guide: How to Clone an Existing Form from a URL.
However, I am not sure what you meant by having ten columns across and 31 lines down. Are you referring to ten columns of fields or having a matrix table within the form that has 10 columns and 31 rows?
Please provide further details so we can better assist you.
Thank you. -

I don't see anything but a form though with name and email.
Here's what I need. I have ten vacation rental properties. I need the sheet
to have 10 columns vertical so I can put the name of each property at the
top of a column. Then I need lines across and be able to number 1 through
31 down the far left side..days of the month. This way I can keep up with
what is rented or available easily. I had one before but lost the template.
I write a month at the top of each page. So, if a property is rented April
1 through 5, I can go to the April page in my notebook, over to the column
for that property, and mark out those dates with a little x. This is a
quick reference when asked if something is available. I hope this helps a
bit. Basically need 10 vertical lines and 31 horizontal lines on the
sheet. Thank you for any help! Warm regards, Susan

I've added a Spreadsheet widget to the form with 10 columsn and 31 rows per your request. But to make room for all the rows, I have extended the height of the entire form. You can check out the updated form here https://form.jotform.com/63537950131959 and clone it to your account.
If you want, you can check out our form templates here https://www.jotform.com/form-templates/ to see if one fits your requirement. To use them, simply follow this guide: How to use the form templates

form and learning how to place numbers instead of letters at the top and so
forth. Thank you so very much!!!! Warmly, Susan

But, I've looked and looked and cannot figure out how to remove the letters
across the top of the columns and replace them with what I need... 204,
205, 218, 7A, Kee-Kee,C.S., 12, Lovell,621.
I know would have to be really small but that's OK. Could this be explained
sans taking a lot more of your time? I feel so guilty.:) warmly, Susan

Hi Susan,
Unfortunately there is no option yet to modify or change the Text header column of the Spreadsheet widget . So you were not able the letters in the columns and change them.
Ex:
You may want to use the regular Matrix table field instead since you will have the option to use your own custom header text in the columns.
Example:
Hope this help. Let us know how we can be of further assistance.
