I tested my form (that I meant to have encrypted), and when I opened the link in the notification email, it did not request my key. The data appeared encrypted, then after 5 seconds it showed the form responses. Does it automatically read the key? Do I need to change some settings? Is it not secure?

It is possible it was not asking your for the private key because you were using the same browser a the time. The browser cache was able to determine already your account that have access to the encrypted form.
Try opening the form submission on a separate browser or in incognito or private mode. It should pop-up the screen for the private key requirement.
