i cannot seem to change background color to the one i see on the form? it is brown when i publish and i want off white.

I see that you have set a Form Image and a Page Image for the form Client Intake Form
Is that what you're also trying to do with the other two forms?
Or, if not, can you describe to us exactly what you would like to happen, please?

Also, can the dark gray textured background on the intake form be lightened a bit? Or is that not an option.

I have managed to change the page and form background of both forms.
Are you referring to this? (please see image below)
So you could change that to your preferred color, please go to the Advanced Designer page of your form
Then, on the designer page, click the header and update the background color.

The charcoal color comes from a Page Background, please see the next screenshot.
