I have multiple fields to add up and the selection contains text (ex:"Not Riding") to guide them since there are multiple selections. Then I have other fields that will be added or subtracted from that fields to get a final total. The text may be hindering the calculation but I'm not sure how to get them calculated without redesigning the entire form. HELP!

You can give calculation values to the fields that contain text if they are drop-down lists, checkboxes or radio buttons.
I've checked your form and cloned it on my side in order to test. As I have seen you have already set calculation values to the following field:
In order to make the selections calculate, please use Form Calculation Widget in order to get a final total in your form as you can see the screenshot below:
You should add the checkbox field to the form calculation widget's settings. So, if a user selects any option, calculation value will be calculated automatically inside the form calculation widget as you can see the screencast below:
