When I try to create a new form, jotform automatically saves the old email address, and I can't figure out how to change it.
Second question is, customers are writing in, without putting their email addresses in the body of the message, so I cannot answer them. This is awful, because now the customers think we're not answering them! Am I doing something wrong?

You can prevent your customers to submit the form without the email address data, please set the field as required , as shown below :
