The Auto-responder and Notification emails being sent are not arriving in my inbox the same way that they are formatted in the back end set up.
I selected Arial in the set up of the emails and the email is coming in Times New Roman (or similar). See screenshot attached.
Is there something in the source code I can write to ensure it's always in Arial (or whatever font I choose)

yes it is possible to change the font family of your form's notification email alert. Please check the screenshot below:
