We have had several complaints from 3 separate clients( all from 3 separate states in Australia) saying they are having problems completing their forms & uploading documents "slow & clunky".
When my boss went to edit a submission( from email notification) there was nothing there on the form and he had to login into jotform to edit the submission.

We have not received any reports with the server performance from the region and it should be working fine. I have tested editing a submission using a proxy server of Australia and was able to edit it without any issue.
Could you try using a different browser or logging to your JotForm account using a different connection (may be on mobile) to see if that works?
