After a form is completed and submitted, how do I make a change or add a corrected document?
When I view submissions, I select edit form make the change but there is no way to save it. If I click submit form, it wants me to fill in all required fields include CC information which I do not have nor do I want them charged again.
Any help would be greatly appreciated.

You should be able to edit your submissions without entering credit card info.
I will escalate this issue to our developers and we will inform you via this thread once this issue is resolved.

Was your payment integration set to required? If it was, then that was one of the causes of the problem.
We had a glitch that prevented Square payment checkboxes from being pre-filled with the saved values.
Thus, the 'required' validation was being triggered, preventing you from submitting the form.
We have just fixed the glitch, so you may now set your Square payment as required and it will not ask you to fill up the credit card info when editing a submission.
