Can your forms be hosted on our web server or are we locked into paying monthly to keep the forms in the future?

I plan on creating quite a few forms (over 100) it will take many many months to do, after they are created are we locked into a subscription to keep my work or can we host the forms ourselves for the future?

You can actually download the form's source in the Publish wizard. Here's a guide: How-to-get-the-Full-Source-Code-of-your-Form.

Please take note that this only contains the HTML, CSS and Javascript files. The sending and posting actions will still be processed by our servers. You need to change the form actions using PHP program and send it to your database.
