I created a form and integrated payment processing with Stripe to a certain account. Now I need to change the stripe account the form is integrated with.
I see it says connected but I see no way of unconnecting it so I can connect it using a different stripe account.

I'm sorry for the trouble caused to you.
Unfortunately there is no direct way to change integrated Stripe account. I am creating a feature request ticket and forwarding it to our backend team.
For now, I would suggest you to please change the "Mode" from test to live and it will ask you to re-integrate with Stripe. Please check the screenshot below:
