... if a 11th person proceed a payment from my form within a month? Or do I have to monitor the submissions and upgrade manually if I notice that I'm arriving close to the limit of the plan?

We don't keep billing information for free users, so there is no way for us to do the upgrade automatically.
We do send out email notices though, if your account is about to reach its monthly limits. The email contains an upgrade link so you can upgrade immediately and keep your forms running smoothly.
