My customer already ordered one product but she would like to upgrade to a different product option. She does not seem to have an option to do so. Please help.

The payment submissions are final, the payment field part cannot be edited. This is done on purpose to keep a correct track of received payments.
It means that your form user will need to submit a new form entry.
