"I want to add three columns to my form and allow the user to enter text in each column, which widget would be recommended?"

I would like to recommend you to use "Input Table" element. You can also change the input type to the text box.
If you need further assistance, please let us know.
All the best!

Another way I have found is to load a text box, on the right you have the option to create a box with as many columns etc as needed. This, of course, doesn't allow an entry by the student but does work very well.
