If you would like to turn off the encryption feature on your form, you will need to go to the settings tab and form settings section, once there click on the more button:

Scroll a bit down and set the "Encrypt Form Data" option to no:

Do note that once you turn off the encryption feature, new submissions will no longer be encrypted, but already encrypted submissions will remain encrypted.

I would also suggest you to take a look to this guide about encryption: https://www.jotform.com/help/344-Encrypted-Forms-and-How-to-Use-Them
