When using the Stripe integration, I change the setting in the additional gateway settings for Create Customer After Submission to be NO. I can save the change and after a while (the next day for sure), the setting always reverts back to Yes.

I'm sorry for the trouble caused to you.
I did test this issue and I am able to replicate it. I am reporting this to our backend team. We will get back to you as soon as we have any update from them.
For now, I have opened your form in V3 editor and disabled the "Create Stripe Customer After Submission" option in Stripe payment tool.

This is now fixed. You may now set the "Create Stripe Customer..." option and it will be saved permanently.
