I am doing the Jotform integration with Highrise and it gives me just two options in the "choose a list" section (Contact and Case). I do not see task per the blog post.
As I will have return contacts and accounts, with multiple projects what is best practice for that integration.
I.E. If Chris' Landscape fills out my form on 5.17 for project A and then on 5.20 fills out the form for project B how should I set that up ( contact, case, Task)? If a return contact fills out a form, will it create duplicate contacts in Highrise?

In your case I would suggest to use Case for the integration as contacts might be involved in different project. If you have return contacts, a duplicate contact will be created in Highrise for that submission.
You can also try both and see which one works best for you.
