I use the Inventory widget to track inventory on forms then collect payment for various services. I understand that I need to refund the payment via my payment processor but is there a way to restock the inventory? Right now I have to go into the widget and trick it into thinking it has something different. Can I "unsubmit" or something similar?

You need to manually set the correct amount available:
Then scroll down, and click on the "Update Widget" button. Let us know if you have more questions.

I was able to do that just fine but I ran into a problem with that. It also resets the number available based on the number of forms submitted. So if I have 10 tickets, 5 people purchase 1 ticket each then 1 person wants to return their ticket, I can manually reset the available amount to 6 but the widget will still assume I've sold 5 and will claim there's only 1 available.

The inventory widget always deducts the quantity of the submitted item. So, to be able to reset the available amount to 6 on your inventory widget, you need to reset it to the initial quantity which is 10 plus the deducted item which is 1 so you need to put a total of 11 available quantity on the Widget.
