i want to use the hidden fields to replicate the same 4 lines of data entry above for anyone wanting to submit more than one image with their instructions,
i cannot find any help or wizard showing me how to use the hidden fields area of the form and the 'collapse form' feature seems to not be showing under my power tools
where can i find out how to use this function like a step by step wizard? i am not a web programmer or developer by any stretch of the imagination!

Hidden boxes are usually used to store information that you wouldn't want the user to see. One good application is adding additional security to your forms. You add a hidden box then populate it with a default value that no one else knows. This way if someone tries to spoof or clone your form you can verify if it is authentic or not. The data is hidden from plain sight so if you get a submission with an inaccurate or invalid value you'll know. Another use case is Conditions. You can send a value from form URL and populate that value on a hidden field. Then you can run conditions to check the value of that hidden field.
For you to replicate the the fields that you have you can Duplicate the form field.
You can find find the Form Collapse field under Survey Tools.

I added a hidden box and populated it with a default value. But when I did an "Inspect Element" of the form, it showed it in the data, like this: type="hidden" name="q9_ifLegit" value="ME. The ME is the default value; so doesn't this mean that someone could spoof my form because they know the hidden default value?

Yes, hidden text box will only be hidden in the rendered HTML page. If you see the source code of your HTML page it will be visible in plain text. That's how its works.

So there is, currently, no true way to prevent somone from spoofing forms, is that correct? If so, are you working on the issue?

I understand your point. =) And I am not againts your question.
But I do have to suggest for you to still create a newer topic for your inquiry.
We just want to have the forum threads better organized and easier for other forum users to find answers to question on their own.
