Under Submissions, it says I have used 2 of 100 submissions. Those 2 were simply "Tests" and I've deleted them both. Does it not start back at zero after I've deleted them?
And what happens when I reach 100?

Deleting submissions won't reset or lower down your submissions capacity. Although the submissions counter resets to zero every month so there is no need to delete your submissions. You will only have to worry about file uploads. File uploads capacity do not reset. So you will have to delete your submissions with files attached if you wish to free up some storage space.
For form submissions, free subscribers reaching beyond 100 submissions will be informed via email. If after 24 hrs there is no upgrade made, the account will automatically be suspended. The account will be reactivated on the next month.

Just another question on top of this, if the submission quota is reached will the form still be available for users to submit or would it disappear?
The reason I ask is that I am planning to do a test run on my website and the quota of 100 forms should be enough but if it exceeds 100 I would request that they submit an e-mail and provide them with an Excel file with the same form.
Going by what you said above the account wold be suspended, is it possible to have the submissions just to freeze at 100 in this instance?

The form will be disabled when it reaches or exceeds its quota and will automatically get disabled/freezed. I would advise upgrading to a premium plan if are expecting to get a lot of submissions. It would be much convenient for your and would probably help your traffic conversion as well.
