I would like to cancel my subscription. Will all my submissions be lost?

In order to cancel the subscription, please refer to this guide: https://www.jotform.com/help/341-How-to-Downgrade-Subscription-Back-to-Free-Account, this will be effective at the end of the current billing cycle.
Yes, the system should delete submissions as Free users are allotted to store up to 500 submissions.
