Some submissions are ok but some submissions
even though they have filled in the Date Picker field do not appear on Google Sheets or Google Drive.
The date Picker field which I use for DOB's are very important.
Any help would be greatly appreciated.

I cloned your form and integrated the cloned for to Google Spreadsheet but I was not able to replicate the issue you are encountering. The DOB field value was properly recorded on the spreadsheet.
Can you try to reintegrate (remove current integration and integrate again) your form to Google Spreadsheet and see if this will fix the issue? If the issue still persists, can you share the Google Spreadsheet integrated to your form to us so we can further investigate the issue?

I think I've found the problem. A conflict between hyphen and oblique between dates. The form is set for hyphen. Some people used / which the form allows but the Google spreadsheet doesn't recognise.

I checked this on my cloned form and I was able to replicate the issue you are reporting. The Date field in the form accepts dd/mm/yyyy format even if the field is set to dd-mm-yyyy format.
When I checked the submission page and the Google Spreadsheet the value for the Date field is set to empty.
It seems the issue is the validation of the Date field, as when I try to change the Date Separator of the field to /, the data was properly captured on my Google Spreadsheet.
I will escalate the issue to our development team for further investigation. Will inform you on this thread any updates to the issue.

Did you mean Short Text Entry field? Indeed it is an alternative. You won't have a picker for dates though. But you will be able to restrict the field to accept the format dd-mm-yyyy by applying input mask as shown below.
Do you specifically require the form dd-mm-yyyy? If not, you can also try some of our date widgets and see if one of them works.
