Is there a way that I can have the form show all of the questions on one page instead of just showing one question at a time?

Yes, you can change your form layout the way you want.
Go to Settings->Form Settings->Show More Options
Scroll down to the option called "Form Layout" and change it to "All Questions in one page".
If you don't have this option in your form builder, then you can send us the form url so we can change the layout for you.
Let us know if you have any further query.

I was wondering the same thing! Thank you!
Is there a particular reason the form default was changed?

The new forms layout is a new way to create forms, it has been developed recently to help users create forms with a cool layout. This was implemented by default to some users so they can experience how the forms look with this new layout.
However, you may switch your forms layout version as explained above by my colleague.
