I am unable to delete the integration with authorize.net.
I could not find any info on this in the User Guide

You need to select the Authorize.net integration and click on the red "remove" icon.
By default Jotform will remember your product list. So when you add the Square integration it will populate it with the same settings. No need to configure it over again.
