Member ID on the form are both "hidden" fields. As an admin, I used to be
able to see/access these fields from the back end whenever I tried to edit
the form submission without having to follow any additional steps. However,
post 27th October, I have no clue what has changed but now every time I
have to edit a form submission, I require to first go to "Edit the form"
and unhide Field #1 and Field #2 and then go to "Edit form submissions" to
be able to edit the form else the issue as you replicated, arises and the
fields don't display.

I have fixed this error. It is working as expected now!
