Hola, es posible que se pueda asignar más de un elementos Jotform a una misma columna de google sheets, es decir, tengo datos de nombres, apellidos, edad, dirección hasta aquí los datos son únicos por usuario que llena el formulario, pero necesito agregar nombre de hijos, edad, sexo, nivel de educación,etc (si tiene 4 hijos estos se me almacenen en filas y no en columnas por cada hijo.

El formulario tendría más o menos las siguientes columas:

nombre, apellido, edad, dirección,nombre_hijo, edad_hijo,sexo,nivel de educación. 

Quisiera saber si es posible hacer un formulario de ese tipo que sea como anidado ya que por cada hijo el nombre del padre o madre que llene el formulario sería lo mismo.

Now, let me help you with your question. With the Google Sheets integration, each of the fields of the form are mapped to a separate column in the Google sheet, each line in Google sheet being a submission.

will return, once submitted, the following in the Google sheet, as soon as the integration is set as explained in the guide you mentioned:

Note that since each line is related to one submission of the form, it's not possible to make nested forms, all information related to the children may be filled into a unique submission. Fortunately, the form can make use of the Configurable List widget, as for instance, or of some conditional logic, to adapt the form to the number of required fields, as for instance in relation to the number of children.
