I have taken over a role from someone who has now left the organisation and I need to access their forms to alter the information on our website. Do you know how I can do this please?
The colleague's registered email address is firstname.lastname@example.org

I have checked the email address "email@example.com" but I did not find any registered account under this email address.
However, I have found the following email addresses in our system which are from the "sustrans.org.uk" domain.
Please refer to the screenshot:
If you want to have access to the forms of your ex-colleague's, you can clone them to your account and reuse them based on your requirement.
You need the form urls for that.

I assumed the workplaces account would have the typical email address firstname.lastname@example.org but I have tried resetting the password using this email and nothing is arriving so it must be under a different email. None of the other people with older accounts are still at Sustrans so I will have to think of an alternative course of action.

The email address associated with workplaces account is "workplaces.scot@sustrans.
org.uk". You can try resetting the password of this account.
