How can I remove the filename from the uploaded photo on an email response?

I see what you meant in your screenshot image
The Image Upload Preview widget work like that though.
I'll check if using the regular Upload field will work differently. I'll be back shortly.

You can use your actual email to receive the Autoresponder with the embedded image in the message.
I used the regular File Upload field and I was able to achieve the same email content needed.
the email message appear like this...

In email content, when you add the Upload field, you can set the dimension size parameter for the embedded image. The format should be like this {IMG:uploadfield:200}
The number(i.e. 200) is the dimension size.
Ex:
