I have setup my form as the client can reply back to the submission once they get an enquiry. ( Attached screenshot )
But for some reason I personally still receive the email reply.
Can you please help!

I did check your form's notification email alerts and did not find any issue with that. You have set the "Email" field of your form as "Reply-to Email". When the form is submitted, your recipient email firstname.lastname@example.org will receive submission email. Once they hit reply to that email, you will see the "To Email" will display the email field of form.
Do you mean to say that it is not working in your form? I would suggest you to please share a screenshot of the submission email you have received and what "Reply-to Email" is being displayed in your email inbox. Yes I know it has been setup correctly but I receive the reply back in the email instead of the email in the submission.

Thanks for the screenshot - This works as intended when I tested it though. I ran this against a form that has an email field. With the same setup as you have, where the email filled out by the respondent will serve as the reply-to email address, here's what I experienced from my perspective:
My setup above is:
Notification Recipient - email@example.com
Sender Email - firstname.lastname@example.org
Respondent's Email - email@example.com (this was filled out from the form)
You would see that the respondent's email is firstname.lastname@example.org and when hitting the reply button in Gmail, it sets the reply-to email to email@example.com too.
You have a total of 13 NOTIFICATIONS and 1 AUTORESPONDER. Are all 13 notifications not working like demonstrated above? Can you try opening your email through your webmail portal instead of Outlook to see if it will make a difference? Can you also try hitting the reply button first and see if the reply-to email will be populated with the intended reply-to address?

Yes all are like that ( and more of my forms do the same thing )
Do you think maybe if the email bounces back it might default to my email?
I don't use Outlook, I use Mac Mail ( But I don't think that is the issue )
I have clicked the reply button and it directs to my email.

I was able to see the issue as well. I reviewed the sent emails from your form and I noticed that the From Email is always using your custom Sender E-mail instead of the E-mail the user had provided.
due to this, if you reply to the email, the To Email will be your own Sender Email.
Can you please try first changing the Sender Email to "firstname.lastname@example.org" instead.
Save the email and do a test again. Try responding to the submission email Notice and check the result if the reply to Email now points to the user instead.
