Thanks for reaching out to Jotform Support. Yes, you can remove/disable the Stamp date by turning off the toggle for Show Timestamps on PDF option in the advanced properties of the signature field. It's easy, let me show you how:

1. In Form Builder, click on the Signature field.
2. Click the Gear icon to open Signature Properties.
3. Navigate to Advanced tab, then toggle off the Show Timestamps on PDF option.

Please note that you will have to repeat the steps if you have more than 1 signature field in your form.
