How do you manage refunds OR if a per a person signed up for the wrong course?

I assumed you were referring to subscription payment type.

I reviewed your form but I did not see payment integration on the form.
To answer your question, JotForm will not be involve in the subscription payment process. It will all be handled on the payment gateway you used on the payment integration (i.e. PayPal).

Sometimes registrants select the wrong class OR register for the same class
multiple times in error and need money issued back to their credit card.
Currently, our school uses Authorize.net
My ask: How can refunds be managed with Jotforms?

The refunds are managed from the payment gateway you integrated your form with, in this case, it would be Authorize.net, so you will need to log into your Authorize.net account to process the refunds.
