Once people have signed up for a certain item that option is no longer available?

I am creating a form where people can sign up to bring certain items. Is there a way to restrict each sign up option so that once 15 people have signed up for a certain item that option is no longer available? Or just a way to show a counter for how many of each item has been selected? 

You can achieve this using widgets that have item counter/inventory options.

Like the Gift Registry widget or the Inventory widget.
