I am looking to take reservations for classes, but want them to have a cap for the number of people that register. I know I can limit submissions, but I have several class options under each form as items for sale (taking a deposit). Can I have them become unavailable after a limit has been reached?

Yes you can, just go back into your Payment Integration and go where your Products are listed then Edit or Add the Quanity field. Under it you will see a " Properties Field " then just click inside the box and edit it by adding or removing the numbers to adjust how many of the product you want to allow to be sold.

Let me clarify, I think that will make me ablle to limit how many ONE person will buy. I would like to limit how many different people can buy, through submitting several different forms. i.e. I have 24 spaces for a class, each person fills out the form seperately, but the form no longer lets them submit after 24 spots are full?

Unfortunately, we don't have any built-in solution for this one in our payment tools; but you can achieve this scenario by using the combination "Inventory" widget, "Form Calculation" widget and one of the payment tools. Below, you will find a guide about how to do that:
