Is it possible once you have a form set up to change the gateway from Paypal to Square?

You cannot add more than one payment gateway into a form but you can change your payment gateway from Paypal to Square. Firstly, you should remove Paypal field on your form. Then, you can add different payment gateway as Square.
Please follow these steps to change your gateway type.
1- First, remove PayPal field on your form.
2- Click on Settings on the top of the page.
3- Click on the integration tab on the left navigation bar.
4- Then, select Square payment gateway.

Wow! I was too "scared" to hit the delete button. Not intuitively obvious that you "delete" the product section then add a gateway, then product poofs back in. I couldn't find instructions on how to change gateway in the help.

As a word of caution, please note that if you have already received submissions, the submission data for the particular field shall be deleted when any field is removed from the form. If it is a test submission, you may consider replacing the field on the form. Otherwise, you may consider creating a different form by cloning and then replacing the payment field to Square.

Ok, I have all the product elements associated with the payment gateway (Square). However, when I plug the Jotform into Weebly and try to shop, the bottom part of the form is hidden. Clicking tab to move through the fields doesn't make them appear. See red arrow where the cursor is hidden. Is there a way to enable a scroll bar on the side?

But if you used the iFrame embed method, like in this guide: https://www.jotform.com/help/215-Adding-a-form-to-Weebly
You can then re-embed your form and increase the height so the form is fully visible:
