I have 3 forms and can't seem to change the destination email on any of them...I've gone into the email function..then click on the recipient email tab...and then enter in the email addresses I want the submissions to go to......yet, each test email gets sent to email@example.com (my login on Jotform). How do I change this?

Please make an actual submissions with your form to test the new email address entered on your form notification. Test Email would only send a test notification to the email address that is associated with your account. We've made it this way to stop the feature being abused, some users uses it for sending spams.
